Ingredients :
1. Milk - 1 liter
2. Rice ( basmati rice or gobindobhog rice ) - 1/2 cup
3. Nolengur / Date Palm Jaggery - 1 bar
4. For Garnish :
1. Almonds
2. Cashew Nuts
3. Raisins
4. Rose Petals ( optional )
1. Step - 1 , Wash and clean the rice .
2. Step - 2 , Take a small bowl . Then add 1 cup water and add 1/2 cup whole rice . Soak for rice 4 - 5 hours or overnight .
3. Step - 3 , After 5 hours strain the water . Take a mixer grinder . Then add soak rice . Grind in a blender to make a paste .
4. Step - 4 , Take a heavy bottom saucepan . Then add 1 liter milk . Keep stirring . When it starts boiling then add rice paste . Keep stirring continuously. when milk half thicken . Then add nolen gur bar or date plam jaggery . Keep stirring or continuous stirring . Cook until jaggery dissolves completely for about 10 minute . Continuous stirring because avoid the burning and rice sticking .
5. Step - 5 , When milk completely thicken , switch off the flame .
6. Step - 6 , Garnish with finely chopped dry fruits or rose petals .
7. Step - 7, Transfer hot phirni to a serving bowl . Allow it to cool for 2 - 3 hours or refrigerate at least 1 - 2 hours .
8. Serve room temperature or chilled .
