Chanar Payesh / Indian Cottage Cheese Pudding











Ingredients :

1. Cow's Milk - 1 + 1 liter = 2 liter

2. Sugar - 1 cup

3. Cardamom Powder - 1/2 tea spoon

4. Lemon juice as required

5. Condensed milk - 1/2 can ( optional )

6. almonds - 3  Pieces ( Finely Chopped )




Methods :

1. Step - 1 , Take a wok . Then add 1 liter milk . Bring milk to boil in wok . Then add lemon juice . Stirring constantly . When milk curdle , switch off flame . Now place cotton cloth or muslin over a bowl . now pour curdle milk into muslin or cotton cloth and strain . now rinse the chana / paneer / cottage cheese under cold running water , press out excess water , take in a plate and press down . keep aside .

2. Step - 2 , Now take a chana / cottage cheese / paneer , knead chana / cottage cheese for about 1 - 2 minutes .

3. step - 3 , Now take a wok . then add 1 liter milk . Bring milk to boil in wok , on high heat , stirring continuously . Medium heat . As a layer of cream forms on top , move layer to the edges , slightly pushing it up the sides of wok  and leaving it to set . Continue this process till milk is reduce to about 1 medium bowl .

4. step - 4 , Now add chana / cottage cheese , now add sugar , add cardamom powder  and condensed milk . Mix it very well . Stir till sugar is dissolved . cooked for  about 5 minutes . After 5 minutes , switch off flame . Place chanar payesh serving bowl . Now sprinkle  finely chopped almonds .

5. Serve at room temperature or cold .
