lauki Chana Dal Recipe / Bottle Gourd And Bengal Gram Curry / Lauki Chana Dal Ki Sabzi Recipe











Preparation Time -   2 hours 20 minutes

Ingredients :

1. Bottle gourd - 1
2. Bangal gram -  1 cup
3. Onion - 2
4. Garlic paste - 2 table spoon
5. Ginger paste - 1 table spoon
6. Kashmiri dry red chili powder - 1 table spoon
7. Dry red chili powder - 1 table spoon
8. Cumin powder - 1 table spoon
9. Coriander powder - 1 table spoon
10. Fresh coriander leaves - 3 table spoon
11. Gram Masala powder - 1 tea spoon
12. Bay leaf - 2
13 . Whole Cumin Seeds - 1 small tea spoon

Methods : 
1. Wash the bottle gourd and peeled the bottle gourd . Cut into medium cubes .

2. Wash and rinse the dal . Soak the dal in enough water  for about 2 hours .

3. After 2 hours , drain the water .

3. Boiled the dal  in a pressure cooker  with  water . Cover  and  close the lid .  Cook till 2 whistles on medium flame . Switch off the flame . Allow  it  to cool  .  Open  the cover  of  pressure  cooker .

4. Pour oil  in a wok . Heat the oil  and oil is  smoking and hot  . Now add bay leaf and cumin seeds . Fry till few seconds .

5. Next  add onion and fry till onions are translucent .

6.  Add bottle gourd cubes  and mix well . Sprinkle salt all over the bottle gourd and mix well . Cover the wok . Cook till 10 minutes on medium flame .

8. After 10 minutes , bottle gourd pieces are done .

9. Next add finely chopped tomatoes and saute till tomatoes are soft and mushy  on medium flame .

10. Add  turmeric powder and sugar and combine . Saute till few minutes . Once sugar is dissolve . Raw smell  goes off turmeric powder .

11.   Also  add  ginger paste and garlic paste .  Saute till few minutes .  Fry    until  raw smell goes off  .

12. Next add kashmir dry red chili powder , cumin powder , coriander powder , dry red chili powder , gram masala powder , finely chopped fresh coriander leaves and mix well . Fry until oil starts  to separates from the sides .

13. Next add cooked dal  and pour 1 cup of water . Mix well . Uncovered  and  Cook  till 10  - 15 minutes  on  medium flame .

14. After 10 minutes , meanwhile  dal is completely thick . Bottle gourd pieces are soft  and tender .

15. Switch off the flame . Pour the dal in a serving bowl .

16. Serve  hot  with  Indian  breads .

Capsicum Chole / Chickpeas With Capsicum Curry / Capsicum Chole Masala









Preparation Time -  8   hours

Ingredients :

1. Chickpeas / Chole - 1 cup
2. Turmeric powder  as required
3. Capsicum - 2
4. Bay leaf - 2
5. Cumin seeds - 1 small tea spoon 
6. Salt to taste
7. Kashmiri dry red chili powder - 2 table spoon
8. Cumin powder - 1 table spoon
9. Ripe Tomato - 2
10. Coriander powder - 1 table spoon
11. Ginger paste - 1 table spoon
12. Garlic paste - 2 table spoon
13. Sugar - 1 tea spoon ( optional )
14. Garam Masala powder - 1 tea spoon
15. Onion - 3 ( peel  the onion and cut  into thin sliced )
16. Fresh Coriander leaves - 3 table spoon , finely chopped
17. Dry red chili powder - 1 table spoon
18. lemon - 1 

Methods :

1. Wash  and  clean the capsicum . Cut  the capsicum and remove on the top of capsicum . Remove the seeds of capsicum . Remove the white part of capsicum . Cut the  capsicum into thin slices . Keep a side .

2. Wash and  rinse the chickpeas . Soak the chickpeas overnight in enough water . Next morning drain the water and wash them   . Keep a side .

3. In  a pressure  cooker  add the soaked  and  drained  chickpeas  and add along  with  water .  Pressure  cook till 2 whistles on  medium  flame . Once  chickpeas  is done . Now switch off the flame  and let the pressure comes down naturally . Once  stem is  gone .  Once it is done .  Now open the pressure cooker  and keep a side .

4.  Pour the oil in a pan  and heat the oil . When oil is hot . Now add  bay leaf  and whole cumin seeds . Stir them . Fry till golden brown on low flame .

5. Next  add  thin sliced onion and fry till light golden brown in color .

6. Also add thin sliced capsicum , salt to taste  and fry till few minutes .

7. Next add finely chopped tomatoes and combine . Once tomatoes are completely soft .

8. Now also add turmeric powder and sugar and mix well . Saute till few minutes .

9. Add ginger paste , garlic paste , kashmiri dry red chili powder , cumin powder , coriander powder , dry red chili powder and mix well . Saute till oil starts to separates from the sides of pan .

10. Next add  fresh finely chopped coriander leaves , gram masala powder , cooked  chickpeas  or  boiled chickpeas with stock   and mix well . Do not  add  water .  Let it cook for about 10 minutes  on medium flame .

11. After 10 minutes , open the cover of pan . Meanwhile  gravy is thick consistency . Squeeze lemon juice  and mix well .   Now my capsicum chole  is ready to serve .

12. Transfer the curry to the serving bowl . 

13. You can also serve with Indian breads , pulao ,  and  steam rice .

Punjabi Style Dal Makhani Recipe / How To Make Punjabi Style Dal Makhani






Ingredients :

 For   Dal  : 

1. Whole black urad  dal / Shabut urad dal  - 1 cup

2. Chana dal / Bengal Gram  - 1/2  cup

3. Rajma / Kidney beans - 1/2  cup

4. Water  As  Required

For   Dal   Makhani   Recipe :

1. Onion - 2 ( Peel the  onion  of  skin  and cut into thin  slices )
2. Tomato Puree - 1 cup
3. Salt to taste
4. Turmeric powder as required
5. Sugar - 1 tea spoon ( optional )
6. Ginger Paste - 1 table spoon
7. Garlic paste - 1 table spoon
8. Cumin powder - 1 table spoon
9. Coriander powder - 1 table spoon
10. Kashmiri dry red chili powder - 1 table spoon
11. Gram masala powder - 1 tea spoon
12. Fresh cream - 2 tea spoon
13. Ghee ( clarified butter ) as required
14. Butter - 1 table spoon
15. Curd  ( whisked  ) - 2 table spoon
16. Kasuri Methi - 1 table spoon
17. Fresh  finely chopped coriander leaves - 1 tea spoon 

For Tempering :

1. Bay leaf - 2
2. Whole Cumin seeds as required
3. Green cardamom - 2
4. Cinnamon - 1
5. Cloves - 2



Methods :

1. Wash and clean the dal under running water .

2.  Take a bowl and add enough water . Soak Rajma , Urad dal and chana dal  in enough water for overnight or atleast  8 - 10  hours . Cover and keep a side .

3. Next morning drain the water from soak dal and rinse the dal  running  in water .

4. Take a pressure cooker . Add  soak mixture dal and water . Mix . Cover and close lid to pressure cooker . Pressure cook for 6 - 7 whistles on medium flame . Once is done . Now switch off the flame . Keep a side . Allow to cool .

5. Once pressure cooker is cool . Now open the cover of pressure cooker . Keep a side .

6. Take a pan . Now add  1 table spoon of  ghee and  1 table spoon of  butter . When ghee and butter starts to melt and completely hot . Add bay leaf , a  pinch of cumin seeds , 2 pieces of slit cardamom and 1 pieces of cinnamon and  2 pieces of cloves . Fry till few seconds on low flame .

7.Now add slice onion and fry till  golden  brown . Once onions are done . 

8. Next add tomato puree and mix well . Saute till few seconds .

9. Add turmeric powder , salt to taste and sugar . Mix . Saute till raw smell goes off from turmeric powder .

10. Also add ginger paste , garlic paste , 1 table spoon of cumin powder , 1 table spoon of coriander powder , 1 table spoon of kashmiri dry red chili powder , 1 tea spoon of garam masala powder , 2 table  spoon of  curd , Kasuri methi , 1 tea spoon  of  fresh  finely chopped  coriander leaves  and mix well . Saute till oil starts to separates from the sides of the pan .

11. Next add cooked dal , 1/2  cup  of  water  and mix well . Give a good stir .

12. Meanwhile  dal  starts to thick .

13. Next add cream and butter . Mix well .

14. Switch off the flame .

15. Transfer  Dal  Makhani  to a serving bowl .

16. Serve hot with naan .

Dhokar Dalna / Bengali Style Dhokar Dalna / Bengali Style Lentil Cake Curry




Dhokar Dalna  is  a Traditional Bengali cuisine and  side dish . It is made with  Bengal gram dal , potato , cumin powder , ripe tomato , onion , and garlic .

Even  ,  it is served as a side dish . It is goes well  with steam rice , polao/ pulao , paratha , fried rice , parotta , naan  and  chapati .  Dhokar  dalna is made  from  blend  channa  dal .  


Main  ingredients  is Bengal gram dal , potato  , ghee ( clarified butter )  , gram  masala  powder  and other spices .  You can   serve  as  to Home party .

Which is of  tangy , garam masala powder  and  ghee  ( Clarified butter )  taste . Even flavor is  of garam  masala and ghee . It is an  awesome  taste  curry .  Which  is  also  Extraordinary dish from Bengali cuisine .  Dhokar dalna is  served  during  festivals .

You can make often to Dhokar dalna . Dhokar dalna is popular Dish  in West Bengal . Which  is a long process cooking recipe .  Dhokar Dalna is a  rich gravy  and long process recipe .



It is also tasty , melt in mouth , mouth watering  and yummy curry . Dhokar dalna is three of part recipe or Dhokar dalna is  3  in 1   recipe .

First part is soaked the channa dal / Bengal Gram  into the bowl  and grind it . Then make a  smooth paste from the channa dal / Bengal Gram  .

Second  part is make a mixture from the channa dal / Bengal Gram paste  and then  saute the paste . Then  cool the mixture and cut the mixture .  Finally  Dhoka or lentil cake   is  fry  methods  from   the  Pulses  mixture  of  lentil  cake .  Third  part is  curry methods of lentil  cake . For The Lentil  Cakes 

Ingredients :
1.   2   cup of  Bengal Gram / Chana  Dal / Cholar Dal
2. Turmeric  powder As required
3. Salt to taste
4. Sugar - 1 tea spoon
5. Gram  Masala Powder - 1/2 tea spoon
6. Oil As Required
7. Ghee / Clarified  butter As Required
8. Cumin Powder - 1 tea spoon
9. Coriander  Powder - 1 Tea Spoon
10. Dry Red Chili Powder - 1 Tea Spoon

For  The  Sauce  Or  The  Gravy :

1. Potato - 2 (  Peeled the potato of outer skin  and cut into medium size cube pieces )
2. Onion - 2 ( Peeled The onion from  outer skin  and cut into slice pieces )
3. Onion Pate -  2 table spoon
4. Garlic Paste - 3 table spoon
5. Bay  Leaf   - 2 pieces
6. Whole Cumin Seeds - 1/2 tea spoon
7. Whole  green  Cardamom - 1 ( Crushed  and  slit )
8.  Ghee As required
9. Cinnamon - 1 stick
10 . Salt  To  Taste
11. Turmeric Powder As Required
12. Sugar - 1 Tea Spoon ( Optional )
13. Oil  As  Required
14. Garm masala Powder - 1 Tea Spoon
 15. Tomato Puree - 1 cup
16. Ripe Tomato - 1 ( Cut into Very small pieces )
17. Ginger Paste - 2 - 3 Table Spoon
18.  Whole  Cumin  Paste - 1 table spoon
19. Whole dry coriander paste - 1 table spoon
20. Dry Red Chili Paste - 2 Table Spoon
21. Kashmiri Dry Red Chili Paste - 2 Table spoon 


To  Make  The  Lentil  Cakes :

Methods :

1. In  a  bowl , add 2 cup of Bengal gram / chana dal  and pour enough  water . Soaked  the chana dal / Bengal gram  for  about  6 - 7 hours  or  over night .

2. Next  morning drain the water completely . Wash and clean the Bengal gram / Chana dal  with water . Drain the water again .

3. Take a mixer grinder . Now  put the bengal gram / chana dal  and  add few drops of water into the grinder  jar . Grind it very well  and  make  a smooth paste from the Bengal gram / chana dal . keep a side .

4. Pour the dal into the bowl . Now also add  1 tea spoon of chili powder , 1 tea spoon of  turmeric powder , 1 tea spoon of sugar , 1 tea spoon of cumin powder , 1 tea spoon of coriander  powder  and sprinkle salt to taste . Mix it well . Keep  a side .

5. Take a wok or pan . Pour the oil into the wok and heat the oil . Now pour the pulses mixture into the wok . Mix it very well . Stir  till  the  mixture  leaves  the side  of  wok .  Stir until the  pulses mixture  is  dry   and  it  come  together  like  a dough .  Moisture  is evaporated  from the pulses . Once pulses mixture is completely  dry   and like a dough  . Then switch off the flame .

6. Now take a flat plate . Add  few  drops  of  oil or ghee  and  grease the plate . Now pour the mixture into the grease plate .  Pat  down   the mixture  and  spread  it  evenly .  Let   it  cool  down  for 10 - 15  minutes .    Allow  to cool .  Once the pulses mixture is completely cool .  Then cut the mixture into the diamond shape or square  pieces . Keep a side .

7. In a wok  add enough  oil  and heat the oil . Once oil is  completely  hot  . Now drop the Diamond Shaped  lentil cake one  after one into the hot oil  on medium  flame . Fry till golden brown  on both sides  on  medium flame . Take it out  from hot oil . Put the lentil cake in to the bowl . Keep a side .

To Make The Sauces Or The Gravy :

Methods :

1. Take a wok .Add oil into the wok . Heat the oil . Once oil is completely hot . Then  put the potato pieces one by one  into the hot oil . Fry till golden brown . Remove the potato pieces from the hot oil . Put the potato pieces into the bowl . Keep a side .

2. Now add 2 pieces of bay leaf , 1/ 2  tea spoon of  whole  cumin seeds , 1 pieces of crushed cardamom , and 1 pieces of cinnamon and stir for few seconds . Once spices  are splatter .

3. Now add   slices onion  and fry till golden brown color .

4. Next add  2 table spoon of onion paste and saute till separates oil from onion paste .

5. Add finely chopped tomato piece  into the oil . Saute till tomatoes are soft .

6. Next add  3 table spoon of garlic paste , salt  to  taste , turmeric powder , 1 tea spoon of sugar ,  1 cup of tomato puree , 3 table spoon of ginger paste , 1 table spoon of cumin paste , 1 table spoon of coriander paste , 2 table spoon of dry red chili paste , 2  table spoon  of  kashmiri dry red chili paste  . Saute and fry the all spices . While  spices  is   separating   from oil .

7. Now pour  the  2 - 3 cup of water  and  add  fried  potato  . Mix  it well . Cover  the wok . Let it cook  for about 10 minutes .

8. 10 minutes later , open the cover . When potatoes are tender and gravy starts to thicken . Now add fried  lentil cake or Dhoka  into the gravy . Mix it very well . Now add 1 tea spoon of ghee  or 1 tea spoon of garam masala powder  into the gravy . Mix it very well .

9. Now switch off the flame . Transfer the Lentil Cake Curry Or Dhokar  dalna in a  serving bowl .

10. Serve hot  with steam rice  or your choice's  food .

Rajma  Masala  is  also Delicious   and  tasty  dish .   Rajma ( which  means  is kidney beans )    Chawal  ( Which means is steamed  rice )   is a famous food of  North  Indian  of   People . Usually  Rajma  Masala  is  served  also  with  steam   rice .

Ingredients :

1. Rajma / Kidney beans - 1 cup

3. Turmeric  Powder - 1/2  tea spoon

4. Sugar - 1 tea spoon

5. Bay  leaf - 2 pieces

6. Whole  cumin  seeds - 1 tea spoon

7. Fresh  creme - 1 tea spoon

8. Oil As required

9. Onion - 2 ( peeled  the onion and cut into very thin slices pieces )

10. Garlic  - 4 , ( peeled the garlic )

11. Ginger   paste  - 1  table spoon

12. Kashmiri  Dry  Red  Chili Powder - 1 table  spoon

13. Dry  red  chili powder - 1 tea spoon

14. Cumin Powder  - 1 table spoon

15. Coriander  powder - 1 table spoon

16. Garam  Masala  Powder - 1 table spoon

17. Fresh  coriander  leaves - 2 table spoon ( finely Chopped )

18. Ripe  tomato - 1 ( cut into very chopped  pieces , keep  aside )

19. Tomato Puree - 1 cup 

Methods :

1. In a bowl  add  1up of  rajma or kidney beans  and pour the  enough water  into  the rajma  bowl . Soak  the  rajma  or  kidney beans  for  about  7 - 8  hours  or  overnight  . Keep a side  and cover it .

2. Next  day morning   , take the  rajma  bowl  and  open the cover  . Now  drain the water from rajma or kidney beans .

3. Take  a pressure  cooker ,  add soak rajma or kidney beans  and pour the water  into the pressure cooker . Close the cover it  and pressure cook  till  3 - 4 whistles .

4. After  3 - 4 whistles , switch off the flame . Allow to cool and keep a side .

5. Once  it cool . You can  open the cooker and  mix  it again   . Keep a side .

6. In a mixer grinder  now  add  4 pieces of garlic ,  1 table spoon of  ginger paste  , 1 table spoon of kashmiri dry red chili powder , 1 tea spoon of dry red chili powder ,  1 table spoon of cumin powder and 1 table spoon of  coriander powder . Add few drops of water into the spices  and mix it very well . Make a smooth paste from the spices . Keep a side .

7. Next , take a wok or pan . Pour the oil into the wok or pan .

8. When   oil   is hot  . Temper with bay leaf  and whole cumin seeds . Stir for few seconds .

9. Next  add  very thin slices  cut onion into the hot oil . Fry till onions are light brown  and  tender .

10. Add finely chopped tomato and fry until  tomatoes  become soft .

11. Now  add sprinkle salt to taste and mix it very well .

12. Add  1 tea soon of turmeric powder and mix it very well . Saute till raw smell  goes out  .

 13. Now  add  1 tea spoon of  sugar , 1 cup of tomato puree , 2 table spoon of fresh coriander leaves ,   and  ground  spices  paste  and mix it very well . Saute the spices  until leave the oil  from the sides .

14.  Add  boiled rajma or kidney beans   into  the spices  .  Add 1 cup of water . Mix it very well .  Let  it cook  for 10 minutes .

15. 10 minutes later ,  gravy start to thickness consistency  or gravy is  completely  thicken  consistency . Now  add 1 tea spoon of garam masala powder and  add fresh cream 1 tea spoon into the curry . Mix it very well . Switch off the flame .

16. Pour the curry into a serving bowl .

17. Serve hot with  steam rice , chapati or  Phulkas .

Dalma Recipe , Oriya Special Dalma Recipe , Or Oriya Dal And Tarkari Recipe , ( Oriya Special Lentil And Mix Vegetables Curry )





Ingredients :

1. Toor dal / Arhar dal - 1 cup
2.Panch phoran - 1 tea spoon      
3. Pumpkin ( yellow / red ) , cut into medium pieces - 1 bowl 
4.Brinjal ( eggplant ) - cut into medium pieces
5.Potato - 1, peel the potato and cut into medium pieces
6. Ridge Gourd - 1 , peel the ridge gourd and cut into medium pieces
7. Pointed gourd  - 3 , peel the pointed gourd and cut into medium pieces
8. Bay leaf - 2
9. Whole dry red chili - 1
10.Ginger paste - 1 tea spoon
11. Kashmiri dry red chili powder - 1 tea spoon
12. Cumin powder - 1 tea spoon
13. Coriander powder - 1 tea spoon
14. Ghee ( clarified butter ) - 1 tea soon
15. Salt to taste
16. Turmeric powder as required
17. Sugar - 1 tea spoon
18. Grate coconut as required
19. Fresh coriander leaves ( finely chopped ) as required
20. Ripe Tomato - 1
21. Oil  as required
22. Water as required 


Methods :
1. Wash and  cut the vegetable by the water . Drain the water from the vegetable . Keep aside .
2.  Soak  the dal for about  3 - 4 hours . Keep aside . After 4 hours drain the water from the dal .
3. Add the dal  , pour 3 cups of water  and few drops of oil into the pressure cooker .
4. Cook for 3 whistles . Cook till dal is cook . Then switch off the flame  . Allow to cool . Keep aside .
5. Release  the pressure completely  from the pressure cooker .
6. Open the pressure cook . Give an one stir .
7. Take a wok . Switch on the flame . Heat the oil in wok . When oil is completely hot . Now oil is ready .
8. Then add panch phoron , bay leaf and whole dry red chili  into the oil . Stir for few seconds .
9. Add finely chopped onion into the wok . Fry till golden color .
10. Then add cut the vegetable into the wok . Sprinkle salt to taste into the vegetable . Mix it very well . Reduce to heat very low . Cover it . Cook for 10 minutes .
11. After 10 minutes , when vegetables are half tender .
12. Then add finely chopped tomato . Saute till tomatoes are tender .
13. Add  turmeric powder into the vegetable . Saute for 1 minutes . Saute till raw smell goes off from the turmeric powder . Add  sugar saute for few seconds .
14.. Next add kashmiri dry red chili powder , cumin powder , coriander powder , ginger paste ,  and  few drops of water  into the vegetable . Mix it very well .
15 . Saute till separates oil from the masala .
16. Now add 2 table spoon grate coconut  and add  fresh  finely chopped coriander leaves  into the wok . Mix it very well . Saute for few seconds .
17. Then add boil dal and 2 cup water  into the wok . Mix it very well . Cook for 10 minutes .
18. Dal are thicken consistency . All vegetables are cook and tender .
19. Then switch off the flame . Add 1 tea spoon of ghee into the dal . Mix it very well .
20. Pour the dal into the serving bowl . Garnish the dal with  grate coconut .
21. Serve hot .

Green Moong Dal Curry / Green Gram Curry Recipe






Ingredients :

1.  Tarka  dal ( Green moong  dal   moong dal  gota or green lentil )  -  1 bowl
2. Potato - 1 ( peel the potato and cut into small cubes )
3. Salt to taste
4. Sugar - 1 tea spoon
5. Ripe tomato - 1 ( finely chopped )
6. Onion - 3 ( peel the onion and cut into slices pieces )
7. Garlic paste - 2 table spoon
8. Ginger paste - 2 table spoon
9. cumin powder - 1 table spoon
10. coriander powder - 1 table spoon
11. kashmiri dry red chili powder - 1 table spoon
12. Dry red chili powder - 1 table spoon
13.garam masala powder - 1 tea spoon
14. bay leaf - 2 pieces
15. whole cumin seeds - 1 tea spoon
16. fresh coriander leaves - 2 table spoon ( finely chopped )
17. Lemon juice - 2 table spoon

Methods :

1. wash and clean the dal .
2. Soak the dal in enough water for about 6 hours or overnight .
3. Next day drain the water properly from the dal .
4. Take a pressure cooker . Then add dal and  pour  water ( as required )  into the cooker . Cover the pressure cooker and close the lid . Cook for 2 whistles . When it is done . Then switch off the flame . Keep aside .
5. Allow to cool . Once it is  cool . Then open the cover . Keep aside .
6. Take a wok . Add oil into wok . When oil is hot .
7. Put the potato cubes pieces . Fry till golden color . Take out them from the oil .
8. Then add whole cumin seeds and bay leaf .
9. Add onion slices . Fry until onions are brown color .
10. Next add finely chopped tomato . Fry till tomato pieces are soft .
11. When it's done . Put salt to taste , turmeric powder and sugar . Fry for 1 minutes .
12. After 1 minutes , add 2 table spoon of garlic paste , 1 table spoon of cumin powder , 2 table spoon of ginger paste , 1  table spoon of coriander powder , 2 table spoon of kashmiri dry red chili powder , 1 table spoon of  dry red chili powder , add finely chopped fresh coriander leaves  2 table spoon and add 1 table spoon of garam masala powder  and add 2 table spoon of water .
13. Fry the masala until leave the oil from the masala .
14. Then add boiled dal and fried potato . Mix it very well .
15. Now add water 2 cup of water  . Mix it very well . Cook for 10 minutes  .
16. After 10 minutes , when dal is thicken consistency . Then add 2 table spoon of lemon juice . Mix well .
17. Switch off the flame . Transfer to a bowl .
18. Serve hot .

Enchor Diye Cholar Dal / Kacche Kathal Ki Chana Dal / Bengal Gram With Raw Jackfruit

Enchor  Diye  Cholar  Dal  is a  delicious  and  unique  of  taste  .  It is  a traditional  Bengali Recipe .
Made  with  raw green  jack fruit , Bengal gram  lentil , bay leaf , whole cumin seeds , gram masala powder and others spices .  Main ingredients  is raw green  jack fruit  and  bengal gram . You can  serve as  during  lunch .



It goes well  with steam rice  , chapatis  and Indian bread   and  phulkas . My personal choices is  it goes  very well  with steam rice .

You would  not be  disappointed  this dish . Pulses or dal is  complete protein food . Pulses  are good sources  of protein  , carbohydrates , iron  and micro nutrients .

As well  it is  a no onion  and no  garlic dish . You can along  serve as  to guests  and  friends .

Jack fruit  has high  sources  of Antioxidants , Vitamins ,  and  Minerals  .

My  grand mother used to  made  this  dal  during Summer  Season .  She   would   cooked    tasty  dal  often  .  She   would  added  to  hing (  Asafoetida  )  in  dal's  .

Ingredients :

1. Enchor /  Raw Kathal /  Raw Jackfruit ( Peel and cut into medium size cubes ) - 1 medium size   bowl ,  and then   boiled

2. Bay Leaf - 2 pieces

3. Whole Cumin seeds - 1 tea spoon

4. Whole dry red chili - 1 pieces

5. Whole   crushed cardamom  seeds  - 1 pieces

6. Kashmiri dry red chili paste - 1 table spoon

7. Whole Dry Red Chili Paste - 1 Table Spoon

8. Ginger Paste -  2  Table spoon

9. Cumin Powder or  Cumin Paste -  1 Table Spoon

10 . Coriander  powder or coriander  paste - 2 Table spoon

11. Salt To Taste

12. Turmeric Powder As Required

13. Sugar - 1 table spoon ( optional )

14. Mustard Oil As Required

15. Garam Masala Powder - 1 Table Spoon

16. Ripe Tomato - 1 , finely chopped

17. Bengal Gram / cholar dal / chana dal ( boiled ) - 1 bowl

18. Cinnamon - 1 crushed

Methods :

1. Take a wok . Then add oil . When oil  is completely  hot .  Switch  on the flame . Then add  Whole dry red chili 1 pieces  , bay leaf , whole cumin seeds , cinnamon , and add whole crushed  cardamom . Fry till 1 minutes or stir for a 1 minutes .  Then add boiled  raw kathal /  or raw jack fruit and add ripe chopped   tomato into hot oil   . Saute  till  5 - 6 minutes  on  medium flame . After 5 minutes , then add salt to taste into  boiled jack fruit  . Mix well . Then add turmeric powder  and  add 1 table spoon of sugar . Mix well . Saute  till   raw jack fruits are soft  and tender .

2. Step - 2 , Then add  kashmiri dry red chili paste  1 table spoon , add  whole dry red chili paste 1 table spoon ,  ginger  paste  2 table spoon , cumin powder or cumin paste  1 table spoon , coriander powder or coriander paste  2 table spoon and add  garam masala powder  1  table spoon . Mix well . Saute and fry spices   until   oil  is  separates . Then pour  the boiled  dal  and  pour  2 cup  of water  . Mix well .  Cook  until  high flame 5 minutes .    Then  reduce to  the  flame . Simmer for 10  - 15 minutes . Cover  it .

3. Step - 3 , After 10 minutes , open the cover . Meanwhile  dal is thicken . Then switch off the flame . Transfer to a serving bowl .

4. Serve hot with steam rice .

Cholar Daler Ghugni / Spicy Bengal Gram Curry






Ingredients :

1. Chana Dal / Bengal Gram  / Cholar Dal  - 1 cup

2.  Kasmiri Dry Red Chili Paste  / Powder - 2 Table  Spoon

3. Dry Red Chili Paste / Powder  - 1 Table Spoon

4. Sugar - 1 Table Spoon

5.Whole  Cumin  Seeds  Powder /    Paste  - 1 Table

6.  Whole Coriander  Seeds  Powder /  Paste - 1 Table Spoon

7. Ginger Paste - 2 Table Spoon

8. Garlic Paste - 3 Table Spoon

9. Onion  - 2 medium , peel , ( finely Chopped )

10 . Ripe Tomato - 1  ( finely chopped )

11.  Salt  To Taste

12. Turmeric Powder As Required

13. Garam Masala Powder - 1 Table Spoon

14. Potato 1 , Peel , ( cut medium sizes cube )

15. Oil  As Required

16. Bay Leaf - 2

17. Whole  cardamom - 2 ( crushed )

18. Whole Cumin Seeds - 1 Tea Spoon

Methods :

1. Step - 1 , Rinse , clean and wash dal . Soak the dal  2 - 3 hours . After  2 - 3 hours , drain the water .

2. Step - 2 , Take a pressure cooker . Turn  on the flame . Now add dal , turmeric powder , add oil ,  and add water . Cover and close the lid . Pressure cook for 1 - 2 whistles  or until dal  are half soft  , half cooked   and   half  tender . Then switch off the flame . Keep aside for  10 -  15 minutes .

3. Step - 3 ,  After 10 - 15 minutes , open the pressure cooker cover , dal all done . Keep aside . Transfer to a bowl .

4. Step - 4, Take a wok . Switch on the flame . Then add oil . Heat for oil 2 - 3 minutes . When oil is  hot and smoke . Then add bay leaf 2 pieces , Whole cumin seeds 1 tea spoon and add  whole cardamom ( crushed ) - 2 pieces . Stir  for  a few seconds . When nice aroma comes from spices  . When crackling ,  Then add cubes potato and fry till golden color . Then add finely chopped onion and fry till light golden color . Stirring  occasionally . Then add turmeric powder , add sugar 1 table spoon   and  salt  to  taste ,  saute for 2 minutes .  Now add chopped ripe tomato   fry till  tomatoes are soften . Then  add  ginger paste 2 table spoon  , garlic paste  3 table spoon , kashmiri dry red chili paste or powder  2 table spoon , dry red chili paste or powder 1 table spoon  , whole cumin seeds paste or powder 1 table spoon  , whole coriander seeds paste or powder  1 table spoon  ,  and add garam masala powder  1 table spoon . Mix it very well .  When oil shows separately or when oil start separating from the spices or masala . Then  add  boiled  dal & 2 cup water . Mix well . Keep stirring .

5. Step - 5 , When dal bring to boil or when it is  start boiling . Then  Reduce  heat  to  very  low  . Simmer  for  10 - 15 minutes . Cover the wok . Cook  till dal and potatoes are tender .

6. Step - 6, After 15 minutes , open the wok cover . When potatoes are tender and dal  is thicken . Then switch off the flame . Transfer to a serving bowl .

7. Serve hot with Indian  breads , paratha , chapatti , luchi or steam rice .

South Indian Style Toor Dal / Arhar Dal







Ingredients :

1. Toor Dal / Arhar Dal - 1 Cup

2. Onion 2 ( Peel ) - Finely Chopped

3. Whole Dry Red Chili - 2 Pieces

4. Pumpkin ( peel ) - 1/2 Cup , Small Cubes

5. Brinjal - 1/2 Cup , Small Cubes

6. Whole Black Mustard Seeds - 1 Table Spoon

7. Curry Leaves - 20 Or Handful

8. Turmeric powder as Required

9. Salt To Taste

10. Sugar - 1/2 Tea Spoon ( optional )

11. Tomato - 1 ( finely chopped )

12. Kashmiri Dry Red Chili Paste - 2 Table Spoon

13. Dry Red Chili Paste - 1 Table Spoon

14. Ginger Paste - 1 Table Spoon

15. Garlic ( Peel ) ,  Paste  - 2 Table Spoon

16. Cumin Paste - 1 Table Spoon

17. Coriander Paste - 1 Table Spoon

18. White Oil As Required




Methods :

1. Step - 1 ,  Take a pan .  Turn  on  the  flame  . Heat for pan  2 - 3 minutes . When pan hot . Now add dal , fry for golden brown color . Switch off the flame . Now  wash the roasted dal under cold water . Soak  the dal in water , at least  30 minutes to 1 hours . After  30 minutes , then drain the water  completely .

2. Step - 2 , Take a pressure cooker .  Turn  on  the  flame . Now add dal , turmeric powder , water ,  and oil . Cover and close the lid , pressure cook  for 3 - 4 whistles  or until dal are  soft and tender . Keep aside for 30 minutes .

3. Step - 3 , When all  the pressure will be released . Then open the cover . Transfer to a saucepan . Keep aside .

4. Step - 4 , Take a wok .  Turn on  the  flame . Then add oil . Heat for oil 2 - 3 minutes . When oil hot and smoking . Then add  whole dry red chili , whole black mustard seeds and curry leaves and stir for a  few seconds .  Then add  finely chopped onion fry till light golden color .  Then add  brinjal cubes , pumpkin cubes , finely chopped tomato , salt to taste and sugar . Simmer for 10 minutes . Cover it .

5. Step - 5 , After 10 minutes , open the cover . When all vegetables are half tender and half cooked . Then add turmeric powder and saute for 2 minutes . Then add ginger paste , garlic paste , kashmiri dry red chili paste , dry red chili paste , cumin paste and coriander paste . Mix well . Keep stirring . Saute for all spices till  oil separates . Then add 2 cup water . Mix well . Simmer for 10 minutes .

6. Step - 6, After 10 minutes , when dal is thicken and vegetables are tender . Then switch off the flame . Transfer to a serving  bowl .

7. Serve hot .

Bengali Style Vegetables Muger Dal / Bengali Style Vegetable Mung Ka Dal / Bengali Style Vegetables Yellow Lentils








Ingredients :

1.  Muger dal / Mung dal / Yellow lentil - 1 cup

2. Ginger paste - 2 table spoon

3. Cauliflower - 1/2 cup ( finely cut , small pieces )

4. Tomato - 1 ( Small size , finely chopped )

5. Green chili  Slit  - 2 pieces

6. Dry Red Whole  Chili - 2 pieces

7. Bay Leaf - 2 pieces

8. Whole Cumin Seeds  -  1/2 tea spoon

9. Dry Red Chili Powder - 1/2 tea spoon

10 . Cumin Powder - 1 tea spoon

11. Coriander Powder - 1 tea spoon

12. Salt To Taste

13. Sugar - 1/2 tea spoon ( optional )

14. Turmeric Powder - 1/2 tea spoon

15. Oil As Required

16. Green Peas - 1/2 cup

17. Ghee ( clarified butter ) -  2 table spoon





Methods :

1 . Step - 1 , Take a wok . Heat for wok 2 - 3 minutes . When wok  is  hot  . Now add  dal into the wok  . Fry the dal  till  golden brown color .  Switch off  the flame . Transfer to a bowl . Now wash the  roasted dal under cold water .

2. Step - 2 ,  In a bowl  add the water .  Soak  the dal in water . At least  2 - 3 hours . After 2 - 3 hours  or soak dal  2 - 3 hours ,  drain  the water .

3. Step - 3 ,  Take a pressure cooker . Now add dal , turmeric powder 1/3 tea spoon , add enough water  and  oil 2 tea spoon .   cover and close lid , pressure cook for 3 - 4 whistles  or until dal  are soft  and tender . Keep aside . Allow it to cool .

4. Step - 4 , After 15 minutes , when  all  the  pressure  will be  released   ,  open  the  cooker  cover . Transfer to a saucepan . Keep aside .

5. Step - 5 ,  Take a wok . Now add oil . Heat for oil 2 - 3  minutes . When oil  is  hot  and smoking ,  add bay leaf , whole cumin seeds  1/2 tea spoon  and whole  dry red chili  fry for 1- 2 minutes . Now  add  finely chopped cauliflower , slit green chili , green peas  and add salt to taste , fry for all vegetables till light  golden brown color . Now add finely chopped tomato , turmeric powder and  sugar   mix well . Keep stirring . Saute for all spices  2 - 3 minutes . Now  add ginger paste , dry red chili powder , cumin powder , coriander powder  and 2 table spoon water , mix it very well .  Saute for all spices till oil separates . Now  add boiled dal  and add 4 cup water . Mix  it well . Stir . Cover the wok  . Cook till cauliflower  and green peas  are tender ( about 10 minutes ) .  Simmer for 10 minutes .

6. Step - 6, After 10 minutes  , open the  cover , When dal  is thicken   , now  add 2 table  of spoon ghee or clarified butter  and add gram masala powder 1/2  of  tea spoon . Mix it very well . Cook for 2 - 3 minutes .  Now switch off the  flame . Transfer to a serving bowl .

7. Serve  hot  with  steam  rice .

Bengali Style Vegetables Cholar Dal Recipe / Bengali Style Vegetables Chane ki Dal / Bengali Style Vegetables Bengal Gram






Ingredients :

1. Bengal   Gram / Cholar Dal / Chana Dal - 1 cup

2. Onion ( peeled  ) - 1 medium ( finely slices )

3. Bay Leaves - 2 pieces

4. Whole Cumin Seeds - 1/2 tea spoon

5. Salt To Taste

6. Potato ( Peeled ) - Small Sizes  Cubes

7. Cauliflower - Small  Sizes Cubes

8. Raisins - 1 Tea Spoon ( Optional )

9. Cashew Nuts -  1/2 Tea Spoon ( optional )

10. Green Peas - 1/2 cup

11. Dry Red Chili Powder - 1 Tea Spoon

12. Cumin Powder - 1/2 Tea Spoon

13. Coriander Powder - 1/2 Tea Spoon

14. Garam Masala Powder - 1/2 Tea Spoon

15. Sugar - 1/2 Tea Spoon ( Optional )

16. Turmeric Powder - 1/3 Tea Spoon

17. Oil As Required

18. Water As Required

19. Tomato - 1 ( Finely Chopped )



Methods :

1. Step - 1 , Rinse , clean  and wash dal .  Soak the dal 3 hours , in 1 cups of water . After 3 hours drain out water . Now  add the lentils / dal to a pressure cooker , add water and  1 tea spoon  oil . Cover the lid and let it cook in medium heat . Cover and close lid , pressure cook for 3 - 4 whistles or until lentils are soft and tender . Switch off flame . Keep aside .

2. Step - 2 , After 30 minutes , open  the   cover . When  dal  are  cooked . Keep aside . Transfer  to a bowl .

3. Step - 3 , Take a wok . Now  add oil . Heat for oil 2 - 3 minutes , when oil is  hot   . Now  add whole cumin seeds  and bay leaves . Stir for  1 minutes . Next add onion slices fry till golden brown color . ( about 2 minutes ) . Keep stirring . Now  add potato cubes , cauliflower ,   finely  chopped  tomato  ,  green   peas  and add salt to taste . Mix it very well . Reduce heat to low . Cover the wok  . Simmer for 10 minutes  or till vegetables are half cook .

4. Step - 4 , After 10  minutes , open the  cover , then add cashew nuts , raisins , turmeric powder  and sugar  , mix  it  very  well . Now  add dry red chili  powder , cumin powder , coriander powder  and garam masala powder  saute  for 2 - 3 minutes , all spices till oil separates . Now  add boiled dal     . Mix it very well . Stir occasionally . Simmer for 5  - 10  minutes .

5. Step - 5 , After 5 - 10  minutes , open the  cover ,  dal  is done .  Switch   off  flame .  Transfer to a serving bowl .

6. Serve hot with rice or  paratha .

Pyaz Diye Massor Dal / Bengali Style Onion Red Lentil Soup Or Dal

Pyaz Diye Massor Dal or  Bengali  Style  Onion  Red  Lentil  Soup Or  Dal  is  a Traditional Bengali recipe . It  is made  from  onion  red lentil , onion  and tomato . It  is  a  basically  soup dish  of  lentil pulses  . It is a  tasty dish . This  dal  goes  well  with steam rice . 

This  Recipe is a Nutritive Recipe .  This dal easily digestible . This Lentil  best source of protein , minerals , carbohydrate and vitamins .  This  lentil  is   good for children .  This lentil is  also best of anemia  patient . 














Ingredients :



1. Red  Lentil  Dal  or  Masor   Dal - 200  gm

2.  Onion  2 big  size finely  slice

3.Turmeric  Powder - 1/2  Tea Spoon

4. Salt  To Taste

5. Tomato  1 pieces  finely  chopped

6. Panch  Phoron  (  mixed  spieces  of  cumin  seeds , mustard  seeds , fenugreek  seeds , fennel  seeds ,  and  whole  black  nigella  seeds )

7. Water  as  required

8. oil as required

9. 1 pieces  dry  red  chili












Method :

1. Step - 1 , wash  red  lentil  dal  or  masoor  dal  under  running  water . Soak the dal in the water for 2 hours .

2. Step - 2  Then  boil  the  dal  in  a  pressure  cooker . Boil  the dal with  2  cups  of  water for  4 whistles . Let  it  cooked  for  15  minutes , till  the  dal  is  completely  boiled .

3 . Step - 3  , Now  add  oil  into a wok . Heat  for  oil  2 - 3  minutes . Now  add  panch  phach  phoron ( mixed  spices of  cumin  seeds , mustard  seeds , fenugreek   seeds , fennel  seeds  and  whole nigella  seeds )   and  add  1 pieces whole  dry  red  chili fry  for  1  minutes .

4. Step - 4 , Now  add finely  slice onion  and  finely  chopped  tomato , fry  for  2  minutes . Then  add  salt  to  taste  and  turmeric  powder  1/2   tea spoon  mixed  very  well  and  stir . Then  add  boiled   red  lentil  dal  or moosor   dal  and  add  4  cups of  water  or enough water  into the  wok  and  mix it very  well .   Cooking  for  10  minutes  and   on  medium  flame .

5.  After 10 minutes , when dal  is   starts to thicken . Then switch off the flame .Serve  hot  with steam   Rice .
