Mango Basundi Recipe




`



Ingredients :

1. Ripe Mango - 2
2. Milk - 2 liter
3. Condensed milk - 1/2 cup
4. Sugar - 1 cup
5. Cardamom powder - 1/2 tea spoon

Methods :

1. Peel the mango and cut the small pieces .
2. Take a mixer grinder . Then add mango pieces in a jar  and  take a  blend  it . Make a fresh mango puree. Keep aside .
3. Take a heavy bottom pan . Switch on the flame . Then add milk .
4. When  milk  comes to boil . Then reduce the flame .
5.  Stir  time to time .
6. When milk is half thicken  consistency or milk is one half .Then add sugar . Mix well . Give one stir .
7. When milk is 1/3 or one third  and milk is ready  for the Basundi Preparation .
8. Then add fresh  mango  pulp , add condensed milk and cardamom powder . Mix it very well .
9. Cook  for milk  2  minutes .
10. After 2 minutes when milk is completely thicken to  consistency  . Then switch off the flame .
11. Pour the Mango  Basundi   into serving bowl .
12. Allow to cool . Put the Mango Basundi into the fridge for about  2 hours .
13. Serve chilled .

Mango Sooji Halwa / Mango Sheera


Mango  sooji  halwa  is  a  dessert .  This  Halwa  is  made  from  mango the  king  of fruit  .  Which  is  made  with  sooji , semolina  or  broken  wheat ,  Mango puree ,  sugar , ghee , milk  and  other ingredients .  It is a healthy and sweet  dish .  Now  is  Ripe Mango's  Season .

Mango  sooji  halwa  is made to during ripe mango's season .   The  mangoes   halwa  is  best  for Summer  Season's . The  mango halwa  is  a hygienic dessert  to  made   at  home .  Mango  halwa  is  nutritious  As  Well  As  delicious .    You  can to enjoy to  Mango Halwa  in this season . You can  offering to god for puja's .

Even you can serve to serve for   Home party  and gate - together . It  goes  very well with Poori  , Luchi  , Parota  and  Breakfast .

You can to  pack in tiffin box  for lunches  to Mango Halwa  for your kids .  You will  like to  Mango Halwa   for  your kids .  Which is  easy  to  make .  You  can also  serve  to  relative  and  guest .

However , it is a nutritive and delicious  mango halwa .  Which is  made from  ripe mango .

Ingredients :

1. Mango Pulp - 1 Cup
2.Sooji / Semolina / Rava  - 1 cup
3. Ghee / Clarified butter - 2 table spoon
4. Sugar As required
5. Milk - 1 cup
6. Raisins - 1 tea spoon
7. Cashew Nuts - 1 Tea spoon
8. Condensed milk - 1/2 cup
9. Cardamom powder - 1/2 tea spoon

Methods :

1. Add ghee in a pan .
2. When ghee is hot . Then add sooji . Mix it very well .
3. Fry till  golden  brown  .
4. Then add milk , sugar , 1 tea spoon of raisins , 1 tea spoon of cashew nut  and add 1/2 cup of condensed milk . Mix it very well .
5. Continuous stirring  to  milk . Because  avoid  to burning  .
6. When sooji  is  starting to  half  thicken  . Milk is one half .
7. Then add 1 cup of ripe mango pulp and add 1/2 tea spoon of cardamom powder . Mix well . Keep stirring .
8. Milk is  completely  evaporated or  absorbed from the halwa  .
9. Then switch off the flame .
10. Allow to cool .
11. Serve cold .

Kolhapuri Egg Curry





Ingredients :

1. Egg - 2 Pieces ( boiled and peeled )

2. Grated coconut - 1 Tea Spoon

3. Whole  Dry Red chili - 1 Pieces

4. Whole Kashmiri Dry Red Chili - 1 Pieces

5. Ginger - 1/ 2 inch or medium size

6. Poppy Seeds ( Posto Or Khus Khus )  - 1/2 Tea Spoon

9. Garlic ( pleed ) -  4 Cloves

10 . Onion - 1 ( peeled ) ( finely chopped )

11. Ripe Tomato - 1 medium ( finely Chopped )

12. Oil  As Required

13. Salt To Taste

14. Turmeric Powder As Required

15. Black Pepper Corns - 2

Methods :

1. Step - 1 , Take a pan . Then add oil . When oil is  hot and smoking , then add Black Pepper corns 2 , add  ripe tomato 1 ( finely chopped )  , Garlic 4 cloves , add Poppy seeds ( posto or Khus khus ) , add ginger 1/2 inch ,  add onion 1 ( finely chopped ) , add whole kashmiri dry red chili , add whole dry red chili and add grated coconut . Saute  or fry for all spices 5 minutes . Medium heat and continuous stirring . Keep aside . Allow  to a cool .

2. Step - 2 , after 15 minutes , when spices  are  cool . Take a mixture grinder . Then add  into fry masala  and add 2 table spoon  of water  gradually . Blend it . Make or grind to a smooth paste . Keep aside .

3. Step - 3 , Take a bowl . Then add boiled   egg and 1 tea spoon turmeric powder . Mix it Very Well . Keep aside .

4. Step - 4 , Take a others wok . Then add oil . When oil is  completely hot . Now add 2 pieces eggs . Fry Till Golden color . Medium Heat .  Remove excess oil . Keep aside .

5. Step - 5 , Then add grind masala paste or spices paste , add salt to taste  and  add turmeric powder   . Saute for all spices till oil separates . Then add  fried eggs . Mix Well . Then add 1  cup of  water .  Simmer for 5 minutes .

6. Step - 6 , After 5 minutes . When  gravy is thicken . Then switch off the flame . transfer to a serving bowl .

7. Serve hot .

Pav Bhaji






Ingredients :

1. Potato - 1 small size

2. Carrot - 2 pieces

3. Green Capsicum - 1 ( finely chopped )

4. Beans - 100 gm

5. Green Peas - 100 gm

6. Finely chopped fresh  coriander leaves - 1/2 bowl

7. Oil as required

8. Tomato -  2  medium size

9. Cauliflower florets - 10 - 12

10 . Dry Red chili powder - 1/2 tea spoon

11. Cumin powder - 1/2 tea spoon

12. Coriander powder - 1/2 tea spoon

13. Garlic Paste - 1 tea spoon

14. Ginger paste - 1 tea spoon

15. Pav Bhaji Masala Powder  - 1 Table spoon

16. Chat Masala Powder - 1/2 tea spoon

17. Garam Masala Powder - 1/2 tea spoon

18. Pav Bread - 2 pieces

19. Butter as required

20 . Onion - 1 pieces ( finely Chopped )

21. Turmeric Powder - 1/2 tea spoon

22. Green Lemon Juice - 2 table spoon




Method :

To Make The Bhaji :

1. Step - 1 , Potato , cauliflower , Beans and carrot rinse , cleaned and wash and peel them . Cut  potato ,  beans , and carrot them into cubes .

2. Step - 2 , Take a pressure cooker . Put potato , cauliflower , carrot , Beans , add water and 1/2 tea spoon salt . Close Cooker . Cover and close the lid and pressure cook for 2 whistles or till the vegetable is cooked tender . Switch off flame . Keep aside .

3. Step - 3 , After 20 minutes , open the  cover , pour vegetable into a bowl . Allow  It  to cool .

4. Step - 4 , Now take a pav bhaji masher and all the cooked vegetables well or heavy ladle mash the vegetables and keep them asides .

5. Step - 5 , Now take a wok , then add oil when oil heated and when it start smoking add finely chopped onion and finely chopped green capsicum  stir fry for about 5 minutes till color golden brown . Now  add Ginger paste , garlic paste and finely chopped tomato  and mix very well . Saute for all spices till  oil separates . Now  add whole  green peas 100 gm and  saute for 2 minutes . Now add salt to taste  and turmeric powder 1/2 tea spoon . Mix well . Saute for few seconds . Now add mashed vegetables . Mix It Very Well . Now add cumin powder 1/2 tea spoon , coriander powder 1/2 tea spoon , dry red chili powder 1/2 tea spoon , pav bhaji masala 1 table spoon and chat masala powder 1/2 tea spoon . Mix well . Stir occasionally . Now add finely chopped  Fresh coriander leaves 1/2 bowl  and green  lemon juice  2 table spoon ,and add garam masala powder 1/2 tea spoon . Mix very well .Over low flame , keep simmering , when gravy thicken switch off flame . Now add 2 table spoon butter mix very well . Transfer to a serving bowl .

To Prepare The Pav :

1. Take a tava . Then heat a tava . When it's hot , then add 4 table spoon butter . Place the slice pav face down and cooked for 2 - 3 minutes to toast slightly once done , remove from the pan . Switch off the   flame .

Mango Shrikhand / Thick Curd With Ripe Mango






Ingredients :

1. Curd / Dahi / Yogurt - 500 gm

2. Sugar - 3 Table Spoon

3. A pinch  Cardamom  Powder

4. Mango  Pulp - 1 cup

For  Garnish

1. Almonds 1 - finely  slice

2. Mango  chopped





Method :

1. Step - 1 , Tie  the curd / dahi / yogurt  in muslin cloth  or  any  cloth  hang  it   overnight  to drain  all the  water . Then  keep  it in refrigerator .

2. Step - 2 , Now pour the   curd into  a bowl , then  add  sugar 3 table spoon  and  mango pulp 1 cup and a pinch cardamom  powder  stir  and  mix well . Then transfer in the serving bowl .

3. Step - 3 , Garnish  with  finely  chopped  mango pieces and  finely chopped almonds .

4. Chill  for  about  an  hour  to let the flavours  mix in well .

5.Serve  With  chilled .

Ingredients :

1.Mango - 2

2. Milk - 3 Table Spoon

3. Sugar - 4 Table Spoon

4. Saffron  Strands -  Few



Method :

1. Step - 1 , Wash  and  rinse  the  mangoes .

2. Step - 2 , Now  Peel  and  cut  into   small  cubes  pieces  of  mangoes .

3. Step - 3 , Take  a  blender  jar . Now  add  mango small  pieces , 3 table spoon milk  and  sugar  4 table spoon . Then  blend  the  mangoes .Now  Pour  the  mangoes  pulp  into  a  bowl . Add  saffron  and  mix  well . Stir  very  well .
4.Step - 4 , Transfer  in the serving  bowls .

5. Serve  Aamras  with  pooris .
